  • 4 teaspoons Dijon mustard
  • 2 teaspoons grated lemon zest
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 2 tablespoons canola oil
  • 1-1/2 pounds sweet potatoes, cut into 1/2-inch cubes
  • 1 pound fresh Brussels sprouts, quartered
  • 4 boneless pork loin chops
  • Coarsely ground pepper, optional

Cooking Instructions for Lemon-Dijon Pork

  • Preheat oven to 425°. Mix the first 4 ingredients in a large bowl; gradually whisk in oil. Reserve 1 tablespoon of this mixture. Add vegetables to the remaining mixture; toss until evenly coated.
  • Place pork chops and vegetables on a 15x10x1-in. pan coated with cooking spray. Brush chops with the reserved mustard mixture. Bake for 10 minutes.
  • Turn chops over and stir vegetables; continue baking until a thermometer inserted in pork reads 145° and vegetables are tender when pierced, 10-15 minutes more. Season with pepper if desired. Let rest 5 minutes before serving. [Recipe and photo credit: Taste of Home]
